Our latest single-origin bar brings cacao from Piura, situated in the north desert coast of Peru.
Distinct from the Peru Chuncho, these beans genetically are a mix of native criollos and are typically ~30% white beans.
Since the colonization in the 15th and 16th century, this cacao variety and this region were deemed as an origin for premium cacao. Its landscape is unlike the usual jungle but a dry, arid desert. With low need of defense mechanisms of predators, the trees naturally develop lower tannin levels and include around 30% white beans, giving the chocolate an uncommon lightness and delicacy.
At 71% cacao, the bar opens with citrus and soft orange blossom, easing into a lingering subtle floral finish.
