71% Chinese Rose Wine Duck Liver Sausage

This chocolate bar interwoven with the Chinese Rose Wine (玫瑰露) with Duck Liver Sausage (膶腸) and won Gastronomic special award in the renowned International Chocolate Award.  

In the year 2021/2022 version, Brazil Trinitario beans was used but it has been no longer available. Thus In this new version, we have picked Thailand beans which has slight fruitiness.  The cacao nibs were infused with the Chinese Rose Wine and the cacao butter is infused with the Duck Liver Sausage from Ser Wong Fun (蛇王芬). You will first feel the rose aroma spreading in your mouth to your nose, then a light duck liver taste on your tongue with a sweetness ending note lingering in the finishing phase.  This is not a sharp liquor bar but aromatic, sweet and well balanced bar though it is a 71% dark chocolate.
